Matcha Cookies
Crunchy on the outside, chewy on the inside and packed with matcha goodness! These Matcha Cookies are a delicious balance of sweet and savory, with a subtle umami twist. Perfect with your tea or coffee!
Ingredients (for ±12 cookies):
- 180 g flour
- 1 tablespoon premium matcha powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 100 g unsalted butter (at room temperature)
- 100 g sugar (white or coconut blossom sugar)
- 1 egg
- 1 teaspoon vanilla extract
- 80 g white chocolate chunks (optional, but super tasty!)
Preparation method:
- Preheat the oven to 175°C and line a baking tray with baking paper.
- Sift the flour, matcha powder, baking powder and salt into a bowl and mix well.
- In another bowl, cream the butter and sugar. Add the egg and vanilla extract and mix until smooth.
- Add the dry ingredients little by little and mix into a firm dough.
- Stir in the white chocolate chunks.
- Roll small balls of dough and place them on the baking sheet. Flatten them a little.
- Bake the cookies for 10-12 minutes until the edges are lightly golden brown. Let them cool on a wire rack.
Tip: For extra chewy cookies, take them out of the oven a little earlier and let them finish cooking on the baking sheet.
