Matcha Cookies

Crunchy on the outside, chewy on the inside and packed with matcha goodness! These Matcha Cookies are a delicious balance of sweet and savory, with a subtle umami twist. Perfect with your tea or coffee!

Ingredients (for ±12 cookies):

  • 180 g flour
  • 1 tablespoon premium matcha powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 100 g unsalted butter (at room temperature)
  • 100 g sugar (white or coconut blossom sugar)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 80 g white chocolate chunks (optional, but super tasty!)

Preparation method:

  1. Preheat the oven to 175°C and line a baking tray with baking paper.
  2. Sift the flour, matcha powder, baking powder and salt into a bowl and mix well.
  3. In another bowl, cream the butter and sugar. Add the egg and vanilla extract and mix until smooth.
  4. Add the dry ingredients little by little and mix into a firm dough.
  5. Stir in the white chocolate chunks.
  6. Roll small balls of dough and place them on the baking sheet. Flatten them a little.
  7. Bake the cookies for 10-12 minutes until the edges are lightly golden brown. Let them cool on a wire rack.

Tip: For extra chewy cookies, take them out of the oven a little earlier and let them finish cooking on the baking sheet.
