Matcha Strawberry Pancakes

Start your day green and sweet with these fluffy Matcha Strawberry Pancakes! The subtle bitterness of matcha combined with juicy strawberries and fluffy pancakes makes this a breakfast (or dessert!) you can't get enough of.

Ingredients (for 6-8 pancakes):

  • 150 g flour
  • 1 tablespoon matcha powder
  • 1 tablespoon sugar (optional)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 200 ml milk (or vegetable milk)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil
  • 100 g fresh strawberries, chopped
  • Extra butter or oil for frying

Preparation method:

  1. In a bowl, mix the flour, matcha powder, sugar, baking powder and salt.
  2. In a separate bowl, whisk together the milk, egg, and vanilla extract. Add the melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until smooth (do not overmix!).
  4. Gently stir in the strawberry pieces.
  5. Heat a frying pan with a little butter or oil over medium heat.
  6. Spoon a spoonful of batter into the pan and cook until bubbles form on top. Flip and cook for another 1-2 minutes until golden brown.
  7. Serve with extra strawberries, honey, maple syrup or a dollop of whipped cream.
