
Matcha Strawberry Pancakes
Start your day green and sweet with these fluffy Matcha Strawberry Pancakes! The subtle bitterness of matcha combined with juicy strawberries and fluffy pancakes makes this a breakfast (or dessert!) you can't get enough of.
Ingredients (for 6-8 pancakes):
- 150 g flour
- 1 tablespoon matcha powder
- 1 tablespoon sugar (optional)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 200 ml milk (or vegetable milk)
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter or oil
- 100 g fresh strawberries, chopped
- Extra butter or oil for frying
Preparation method:
- In a bowl, mix the flour, matcha powder, sugar, baking powder and salt.
- In a separate bowl, whisk together the milk, egg, and vanilla extract. Add the melted butter.
- Pour the wet ingredients into the dry ingredients and mix until smooth (do not overmix!).
- Gently stir in the strawberry pieces.
- Heat a frying pan with a little butter or oil over medium heat.
- Spoon a spoonful of batter into the pan and cook until bubbles form on top. Flip and cook for another 1-2 minutes until golden brown.
- Serve with extra strawberries, honey, maple syrup or a dollop of whipped cream.
